Chicken and Gnocchi Dumpling Soup



Prepared gnocchi is a fast cook’s dream, and they come to life in this simple weeknight recipe for Chicken and Butternut Gnocchi. All Italian ingredients including pesto are adding uniqueness to this soup. Prove it yourself, it's really easy. Watch the video below.

FYI: Gnocchi are various thick, small, and soft dough dumplings. In Verona, potato gnocchi is traditionally served in a tomato sauce—it's a dish associated with Carnival that goes as far back as the 1500s. In Venice, gnocchi is also known as “macaroni.” Made from a base of flour, milk, and eggs cooked and shaped into little discs, they are baked in the oven with butter and cheese (from saveur.com).

More facts: Pesto is a savory green Italian sauce made from a combination of basil leaves, garlic, pine nuts, and Parmigiano-Reggiano or Parmesan cheese. This is a sauce originating in Genoa, the capital city of Liguria, Italy (The Daily Meal and Wikipedia).
