Healthy Chicken Enchilada Casserole

Instead of using short grain brown rice like the recipe calls for, I used long grain white rice! I've had a lot of people try and deviate with different kinds of brown rice (which hasn't really worked because short grain cooks faster than long), so I thought I'd try it with white rice. Turns out- it's AMAZING. You could easily cook this at home, watch the instruction video below.

FYI: An enchilada is a corn tortilla rolled around a filling and covered with a chili pepper sauce. Enchiladas can be filled with a variety of ingredients, including various meats, cheese, beans, potatoes, vegetables or combinations (from Wikipedia).

More facts: Germinated brown rice is unpolished brown rice that has been allowed to germinate to improve the flavor and texture, and to increase levels of nutrients such as γ-aminobutyric acid (Wikipedia).
